Join AON dietitian Madelyn Wilcox as she blends together pumpkin and other spices to create a festive (and healthy) smoothie in our Winter Virtual Dishing Up Nutrition.

INGREDIENTS

1¼ cup pumpkin puree
½ cup unsweetened almond milk
1/8 teaspoon cinnamon
Dash of allspice
Dash of nutmeg
Dash of ground clove
½ cup almond yogurt
2 pitted dates
2 crumbled graham crackers,
as garnish

INSTRUCTIONS

  1. In a small saucepan, combine almond milk and pumpkin
    puree and then heat on low.
  2. Add spices and whisk together while bringing the mixture to
    a near boil.
  3. Combine yogurt and dates in a blender and then add
    warmed pumpkin mixture.
  4. Blend until smooth.
  5. Divide the mixture among four mugs and top with crumbled
    graham crackers (or other garnish of your choice).
